Croatian food is not one single cuisine. It is a mix of Central European, Mediterranean and Balkan influences, and what you find in Zagreb is different from what you might eat on the Dalmatian coast.
You don't need to try everything.
If you have only a few days in Zagreb, these are the Croatian foods we would actually recommend putting on your list.

Štrukli
If you try only one traditional Zagreb dish, make it štrukli.
These soft pastry rolls are filled with fresh cheese and traditionally baked or cooked. They can be simple, comforting and surprisingly filling.
There are many versions, but the classic cheese-filled štrukli is the one to start with.
Locallo tip: Don't think of štrukli as a snack. It is a proper local dish and a great introduction to northern Croatian food.

Zagrebački odrezak
This is Zagreb's answer to the schnitzel.
A breaded veal or pork cutlet is filled with ham and cheese before being fried. It is rich, crispy and definitely not a light lunch.
It may sound familiar if you've eaten schnitzel elsewhere in Central Europe, but the ham-and-cheese filling gives it a distinctly Zagreb character.

Punjena paprika
Stuffed peppers are one of those dishes that feel more like home cooking than restaurant food.
Peppers are filled with minced meat and rice and usually served with a tomato-based sauce. It is a simple dish, but that is exactly the point.
This is the kind of food that tells you more about everyday Croatian cooking than a complicated tasting menu does.

Sarma
Sarma is another classic comfort food, especially popular during the colder months.
Cabbage leaves are filled with minced meat and rice and slowly cooked until tender. It is traditionally associated with winter and family meals.
You may find different versions across the Balkans and Central Europe, but Croatian sarma is very much part of the local food tradition.
Locallo tip: If you visit Zagreb in winter, look for it on traditional menus.

Čobanac and other slow-cooked dishes
Croatian cooking has plenty of dishes built around slow cooking, meat, vegetables and paprika.
Čobanac, a rich meat stew traditionally associated with Slavonia and eastern Croatia, is one example.
You may not see it everywhere in central Zagreb, but when you find a good traditional restaurant offering regional Croatian dishes, it is worth exploring beyond the usual tourist menu.

Fresh cheese, cream and local ingredients
Not everything Croatian has to be a famous dish.
Fresh cheese, sour cream, seasonal vegetables, cured meats and locally produced ingredients are an important part of the Croatian table.
Markets are often a good place to see this side of Zagreb.
If you have time, visit one of the city's markets and simply look around.
You will see what people buy for their own kitchens — not just what restaurants prepare for visitors.

What about seafood?
If you are travelling through Croatia, you will probably hear a lot about seafood.
And for good reason.
But Zagreb is inland.
You can certainly find excellent fish and seafood restaurants here, but if your goal is to understand traditional Zagreb food, we would start with the dishes above.
Save some of the classic Adriatic seafood experience for the coast.
Where should you try Croatian food in Zagreb?
This is where things get interesting.
There is a difference between eating Croatian food and understanding Croatian food.
A restaurant menu can give you the dishes.
A good local food experience can give you the story behind them.
You learn what people actually eat, why certain dishes became popular, where the ingredients come from and how Croatian food changes from one region to another.
For a first visit to Zagreb, we think that combination is worth doing.
